I just watched the video and Jeff Scott said that the coaches are not allowed to watch the guys at all because it's volunteer workouts.

Yep just saw that. My assumption was that they were there based on the clip that said no attendance was taken. If there are no coaches there I would have figured he would have directly said so there. I would add although they may not be on the field they are certainly getting reports and setting up individual workouts for the team.

I believe the training staff gets to oversee the workouts thus prior statements from the coaching staff that the trainers see more of them than anyone else.

That makes sense...there has to be some sort of coordination and control taking place.
